Healthy Banana Pudding


Banana Pudding

Who doesn't love Banana Pudding? Everyone does in the Bible Belt! You can't go to a covered dish dinner at a Church or the Senior Citizens without a Banana Pudding showing up!
So I decided to create a recipe for it that was highly nutritious! This pudding is packed full of protein and is gluten and dairy free! Give it a try. My friends love it! They pray for it!

Dairy free, Gluten free Banana Pudding

3 packages organic firm tofu
1 tub tofuti sour cream
1 tub tofuti cream cheese
Large pinch of Sea Salt
¼ C pure maple syrup
1 ½ cups sugar mix
2 TBLSP vanilla extract
bananas, sliced for top layer
gluten free vanilla wafers
1 large package organic instant vanilla pudding
1 cup Almond, coconut or Soy milk

1. Blend  tofu, sour cream, cream cheese, sea salt, sugar mix,  maple syrup together in food processor until smooth.
2. Add vanilla pudding packet and "milk" to food processor.
3. Blend again to mix.
4. Place in 9x13 dish
5. Top with sliced bananas and crushed gluten free vanilla wafers.
6. Enjoy :)
