Chocolate Chia Seed Pudding
(non-dairy, no soy
and gluten free)
2 C Almond Milk
1 C Chia Seeds
2-3 Tbls. Cocoa or Cacao powder
Pinch of Sea Salt
1 Tbls Vanilla
¼ tsp Cinnamon
Maple Syrup or my
“Sugar Mix” to taste
Directions: Place all ingredients in a high powered blender
and blend until smooth. Add Maple Syrup or “Sugar Mix” one Tbsl at a time until
desired sweetness.
Refrigerate at least 4 hours before serving. Garnish with
fruit, nuts or Whip cream made from canned coconut milk or a product called
TrueWhip* It is a non dairy “Cool Whip” with better ingredients than standard
whipped topping.
Nutritional information: Chia Seeds are packed with protein, fiber,
essential fatty acids (Omegas). They also contain anitoxidants, calcium, iron,
magnesium and other minerals. Almond Milk is a good source of
protein (1.5 g/cup) , 0 sugar, high in Calcium and low in fat.
