Super Healthy Bread recipe
Gluten free, dairy free and Low on Glycemic Index Scale
(GSI)
*****All ingredients are organic*****
Dry Ingredients:
1 C Almond Flour
1 C Tapioca Flour
1/3 C Coconut Flour
2 tsp. sea salt
2 tsp ground rosemary
2 tsp garlic
2 ½ tsp active dry yeast (one
package)
1 ½ Tbls finely ground chia
seeds
2 Tbls. Psyllium husk powder
Wet Ingredients:
1 ¼ C water
2 tsp. Pure Maple Syrup (the
syrup is consumed by the yeast so this lowers the bread on the GIS
Avocado or Olive oil
1 Egg
Directions:
1. Place a cooking stone
(like a pizza stone) in the oven to preheat at 425* about 30 minutes before you
are ready to cook the bread.
2. Heat the water to
105*-110* then add the maple syrup and stir, then the yeast and stir. Let it
sit for 10 min (the mixture should foam or bubble)
3. In a large bowl whisk
together the first 6 dry ingredients
4. After 10 min stir in the
chia seeds and psyllium husk to the wet yeast mixture. Let that sit for about 1
minute until thick. Stir it again and add to the dry ingredients.
5. Stir the mix together with
your hand and place on a solid surface prepped with almond flour and kneed for
about 1 minute. Place the dough back into the bowl that you have coated the
sides with the olive or avocado oil.
6. Cover the bowl with a damp
cloth and put in a warm place to rise for 1 hour 15 minutes.
7. Take the bread dough and
using a knife or pastry cutter divide into 12 equal parts. With oiled hands
shape each piece into a round ball, score with a knife and place on parchment
paper. Remove the heated stone from the oven and place the rolls on the stone. Use
a sharp knife to cut a tick-tac-toe pattern in the top and brush with egg wash.
Bake for about 30 minutes until they are brown. You can also divide into two
large dough balls and bake as a loaf.
8. Remove from the oven and
place on a cooling rack to completely cool.
Each serving contains about 7
gms of Carbohydrates.
My thoughts: This bread makes great toast as well. Use your imagination and add Rosemary, Garlic, cinnamon, nutmeg, bee pollen. Anything you think sounds good!!!
