Gluten Sensitivity is different than
Gluten intolerance.

 Gluten intolerance is actually Celiac Disease. There is a blood test to determine this but there is no real reliable test for sensitivity. So how do you know? If gluten foods cause you intestinal upset or digestive issues then you could be sensitive. Our American wheat flour is very high in gluten. So foods especially sweets or bread products are high in gluten. Cutting these out of your diet could help you!! There are many ready-made organic low or no gluten cookies, crackers, cake mixes, cereals etc.  But if you like to bake your own then here is a low gluten flour mix I have come up with that works well in baked goods.

Flour Mix:
Makes 2 1/4 cups. I quadruple this recipe and keep on hand in an airtight container. All organic ingredients of course!!!

  • 3/4 C Tapioca Flour
  • 1/4 C organic unbleached white flour
  • 1 tsp. xanthan gum
  • 1 1/4 C  Spelt flour OR 1 C Spelt and 1/4 C Amaranth flour
