Grilled Fruit

Summer is the time our grills are used the most it seems. So how about trying your skills at grilling fruit.I suggest bananas, peaches, plums, pineapple, even apples!

Start with ripe fruit except the banana doesn't need to be to soft or it can fall apart on the grill:
*Pineapple rings are great. But sometimes are hard to find so chunks will do
*Peaches and plums- cut in half and remove the seed
*Banana- cut lengthwise, leaving the peal on
*Apple- cut and core. Cut in half, remove seeds and cut each half again. Apples take longer to cook so thinner slices are best

Brush the fruit with butter and sprinkle with brown sugar or my "sugar mix." My sugar mix is low on the glycemic index scale but will still caramelize. You can find my "sugar Mix" recipe on my website under the blog "Just say No to Crack". If you want you can add a pinch of cinnamon to the mix. Your choice.

Heat the grill to med high heat. Place the fruit on the grill. Close the lid and grill for 3-4 minutes. Turn the fruit over and grill for another 2-3 minutes. Look at those awesome grill marks!!!!
Remove the fruit from the grill and serve immediately. I suggest serving over vanilla ice cream or frozen yogurt.

Kid's love this dessert. It is a light summer dessert that allows you to get the nutrition from the fruit in a fun and different way.
