Roasted corn, Avacado salad

 

This salad goes great with any meat or a crusty bread!!

Salad Dressing:

1/3 C EVOO

1 fresh squeezed lemon or lime

1 tsp of Greek seasoning

1/4 tsp garlic powder

4 drops liquid Stevia

salt and pepper to taste

Blend in the blender or magic bullet and set aside

Salad:

2 slices of bacon

1 cob of corn, cut the kernels off the cob

1 large ripe avacado, chopped

2 Roma tomatos seeded and chopped

3 green onions chopped

1/2 C chopped cilantro

Directions:

Chop the bacon and cook until crispy, remove the bacon with a slotted spoon, retain the bacon grease and cook the corn until it is chard, allow both to cool. In a medium sized bowl add all the ingredients and toss. Drizzle with the dressing! Add salt and papper to taste. It's that simple!!
