Chewy Caramel Cookies
These cookies are a recipe I made up from inspiration from something I saw on the internet!!!
They are yummy, nutritious and I haven't found anyone yet who didn't like them. EVEN my junk food friends!! When you see "sugar (mix)", refer to "No More Crack Head Sugar Mix" blog post.

Chewy Caramel Cookies
2 Tblsp pure maple syrup
2 tbls xylitol
½ cup unsalted pecan halves
Caramel Sauce:
½ c coconut milk
¾ c sugar (mix)
1 ½ tsp pure vanilla extract
½ tsp pink salt
Dough:
2 cups almond meal flour
½ c ground flaxseed meal
2 Tblsps coconut flour
½ tsp baking soda
¼ c coconut oil, melted
2 Tbls raw honey
2 Tbls pure vanilla extract
Preheat oven to 375* Prepare candied pecans by adding ingredients into a small sauce pan on medium heat. Heat stirring constantly about 1 min until xylitol dissolves remove from the heat, add the pecans and spread them out on a cookie sheet to cool.
Prepare caramel sauce: In a small sauce pan bring coconut milk and sugar mix to a simmer, stirring constantly. When mixture begins to boil add vanilla and salt stirring constantly. Cook for 4-5 min until caramel begins to thicken and turns brown. Remove from heat and let stand for at least 5 min.
Prepare the dough: add the dry ingredients and mix up then stir the wet ingredients together and add to the dry. Add ½ cup of the caramel sauce to the dough and stir up.
Drop the dough in rounded walnut size balls on the cookie sheet and press down. Then place a pecan ½ in the middle. If there is any caramel sauce left then drizzle over the cookies and bake at 375* for 8-10 min.
